Fish & Crisps Recipe
This week, our recipe takes inspiration from Gordon Ramsey’s famous fish and crisp recipe from his burger bar, BurGR. The Fish and Chip sandwich seems to be a favourite of regular patrons in the American restaurant, so here at The King’s Deli we thought we could recreate the recipe using our very own hand-cooked potato chips. Ramsey uses salt and vinegar crisps, but we think paprika would work just as well.

Gordon Ramsey Crisp Butty

Ingredients

  • One large brioche bun
  • Tartare Sauce
  • Fresh dill
  • The King’s Deli Crisps, your flavour of choice

For the Fish

  • Vegetable oil
  • 200g All-purpose flour
  • A pinch of salt and pepper
  • Half a tablespoon of paprika
  • Thick cod fillets cut into bitesize pieces (700g)
  • 330ml of beer

Method

  1. First thing’s first, and that’s making the tasty fish. Add all the dry ingredients for the fish in a bowl and whisk. You can season this to your preferences, but may we recommend paprika, salt and pepper?
  2. Begin to heat the oil in a fryer and whilst it warms, pat the cod dry with a paper towel. Cover the cod bites in flour.
  3. Add the beer to the rest of the batter slowly, whisking with each splash you add until the batter runs smoothly off a spoon.
  4. Dip the fish into the batter and ensure any excess runs off and repeat with each piece of fish. Once the oil reaches about 190 degrees, carefully add the fish and fry until golden brown.
  5. Remove the fish from the oil and transfer to a thick paper towel to drain any excess.
  6. Smear a generous helping of tartare sauce to your brioche bun (which is always better toasted!) and add the fried cod. Top with your favourite flavour of King’s Deli crisps and garnish with fresh dill, and voila!
